Orange Herbed Rice
Prep time: 20 minutes Serves: 6
| 2 cups | cooked brown rice |
| 2 cups | cooked wild rice |
| 4 | green onions, chopped |
| 1/2 cup | chopped pecans |
| 2 tbsp. | orange rind |
| 1/2 cup | orange juice |
| 1/3 cup | currants |
| 1/4 cup | chopped fresh parsley |
| 1/4 cup | chopped fresh basil |
| 1/4 tsp. | salt |
| 1/4 tsp. | black pepper |
1. Combine brown rice and wild rice in a large serving bowl.
2. Add all other ingredients tossing well.
3. May be served hot or covered and chilled before serving.
