Honey Roasted Pork
| 1 | 2-3 pound boneless pork loin roast |
| 1/4 cup | honey |
| 2 tblsp | Dijon mustard |
| 2 tblsp | mixed or black peppercorns crushed |
| 1 tsp | chopped fresh thyme leaves |
| 1/2 tsp | salt |
1. Place roast on a lightly greased rack in a shallow aluminum foil-lined roasting pan.
2. Combine honey and next four ingredients, brush half of mixture over roast.
3. Bake at 325° for one hour
4. Brush with remaining mixture, bake 30 more minutes or until a meat thermometer inserted into the thickest part of the roast registers 155°.
5. Cover lightly with foil; let stand 10 minutes before slicing.
